I'm losing a bit of antifreeze every trip, but don't see it leaking or spraying, not getting in the oil. Is it more likely the intake manifold gasket or a head gasket?

How much white smoke on start up? Its not the intake if its getting into cylinders. Year and engine and mileage would be helpful.
If 4.3 , pay particular attention to corners where the intake mates to the heads. The rear water ports on the heads are blocked off by the manifold, the front flow through the manifold to the thermostat housing, the right front corner seems to be the most common spot to leak.
2.8 had a habit of blowing the intake gasket by the left rear corner, but its usually an all at once thing, ie temp gauge goes through the ceiling, and crankcase full of coolant as it dumps into the galley.Whitelightning
Sorry, its a '93 with a 4.3. Quite a bit of white smoke, for maybe 3-5 seconds.
if you have a sparkplug that is very clean, that would be caused from antifreeze getting into combustion chamber. maybe via head gasket.
head gasket or craked head. 2.8s have a problem with that
