Pressing the button (until the LED on the dash lights continuously) indicates that the ultrasonic sensors will be disabled if the alarm is set (using the keyfob) within about 60 seconds or so. The sensors cannot be disabled indefinately using this approach.

Your dealer has probably suggested you do this to find out if the alarm is being triggered by the ultrasonic sensors or by the other part of the alarm (the part which detects flutuations in battery current use).
