a car engine is an air pump. it sucks in a mixture of gasoline and air to burn in the cylinder. a vacuum leak lets in too much air. however the engine makers use the vaccum to run other things on the engine as well.

I should have suggested first looking and feeling around for a lose hose in teh engine compartment. You can try twisting and pushing all the vaccum hoses on tighter and see if that clears up the problem. When you step on the gas the vaccum increases and that could be sucking outside air through a lose or cracked hose. A vaccum leak is not the only possible cause of loss of power during acceleration under load but its a fairly easy one for an owner to attempt to find and fix on his own.

Use a length of tube to listen for leaks, power loss uphill is most likely bad compression if it's an older engine.
