Are the upper and lower injector seals the same size/thickness? Would 2 holders be enough for a seals project? I need the car when finished.

No upper and lower are completely different. If you're unlucky (or excessively brutal) you can break all 4 injector holders, so if you absolutely need to have the car running, have all 4 on hand. However, the upper seals are inside the plastic holder and are cooled by the fuel and somewhat insulated from the heat of the head, so often you can get by just changing the lower or outer ones.
