Somewhat disturbing: After a few days of no driving, sometimes starts like there's a major problem: rough coughing choking for about 2-3 seconds then evens out fine, almost like it's not getting fuel or spark...Daily starts are fine, only when it's rested for a long weekend or something...Suggestions welcome from the pros.

Is it rainy or real humid it could be plug wires, cap- or coil, If original replace wires and plugs and cap- rotor. And use a new Distributor Cap Gasket.
Could also be a loss of pressure in the fuel rail.
sounds like injectors are leaking after it sits. try an efi clean at a dealer
