what makes it a truck, not car, tire?

I searched on tirerack.com for 205/75-15

Up comes: BFGoodrich Radial Long Trail T/A (Highway All-Season)

But the description page says it's a light truck tire. The load rating (1609 #s) is the same as for all the car tires on the same results page. Why is it a truck tire?

Here's part of your answer:

Look at the weight ratings: 2335 lbs PER TIRE.

On the Michelin LTX tires I usually buy I think the main difference is the LT tire has an extra sidewall.

Sounds about right. Might also have more actual tread plies as in days of old (most modern tires have a "ply rating"), a bigger bead, or stronger construction in general -- things that give it more ability to carry a heavy load, and/or take a pounding, possibly at the expense of high speed ratings or handling.

The recommended range of air pressures for various situations might be a good bit higher as well.
