- How do I disable the auto door locking (after I reach about 10 mph)?
- How do I disable the always-on headlights?
- Is there any way to keep the rear hatch unlocked by default (instead of locked)

Get a vag-com and change the bit for auto locking
Maybe start at the emrgency brake switch.
There's no button, how would open it?

Remove headlamp switch and locate the wire that goes to the 'TFL' pin on the switch. Tape over it (or anything that keeps it from making contact at the switch). Reinstall.
