I have noticed a coolant smell after I've driven my truck for a while. I only notice it when I get out of the truck. There doesn't seem to be any noise at the engine like a waterpump bearing going out.

HMMMM, must be a leak under the hood somewhereses.
Start lookin' for it. It'll be a loose hose clamp, small pinhole in a hose, waterpump weep holes, or the intake gasket. Could even be the radiator. Waterpump shaft seals can leak coolant and stink things up before they start making noise (i.e. they silently leak until the bearings cook, THEN they get loud).

I'll bet your truck has over 60,000 miles on it.
Get a flashlight, open the hood, look for traces or puddles of coolant just below the thermostat housing and/or where the intake manifold-heads and block all join together. You may see puddled coolant, you may only see whiteish stains where the coolant tracked down. Very likely that the intake manifold gaskets have torn apart and are now leaking coolant.
That is exactly what happened to my truck. The leak on the back of the intake manifold was hard to find. Mike
