In days of old it was 24,000 miles or 24 months. That was the biggie, all fluids, bearing repacks etc. Off roading isn't too serious an issue unless you submerge things. If the water is hub deep bearings should be repacked if applicable, gear boxes drained and refilled. The hot hubs, gear boxes etc hit cold water, cool, a slight vacuum is formed and water gets sucked in. In most cases seals are designed to keep things in, not so much keep things out. Its one of the reasons bearing buddies work so well on boat trailers, the grease in the hub is under slight pressure.
