I just bought an Edelbrock 1407 750 CFM carb for my truck. Has a 5.0 in it I am wondering if this is too big for the engine. Some people tell me its too big and it will burn up the pistons, other people tell me I have to lean it out and it will be fine. What do I do!?!?!?!?

Other than Edelbrock carburetors are junk the size will be ok.
It's probably a little large but I don't see how it will burn up the pistons.
Just have to make sure you are not running lean when push comes to shove.
