Took a look inside my (drained) master cylinder today in my '66 coupe that I'm restoring. In the bottom was a sort of black, syrup gunk that I think is ancient brake fluid remnants. Is this something to really worry about, provided I wipe it out thoroughly with a lintless cloth and flush the brake system? The brakes seemed fine before I started on the car.

That may be adequate... after all, it's only your brakes and not something really important....
If it were mine, I'd tend to go the other way.... overhaul assemblies, check the metal lines close (they can and have rusted from the inside out) and inspect the flex hoses real carefully. Ya gotta figure there's likely near
