I was curious as to what cyl head you out there would choose for a

Out of those three options I'd go with the Windsor Jr heads. A guy here had a motor built using them along with the Edelbrock carb performer intake, and the very common 448/472 lift Ford cam that you can find just about anywhere. IIRC its 10:1 with full length headers and it pulled 308 flywheel hp on the dyno. Now that was from a professional engine builder that tuned it right on the dyno to get the best power curve out of it, but still darn impressive. The 351w heads would need hardened valve seats for today's unleaded gas, and the GT40ps are better than stock, but not up to the Jrs.
