I have a 02 S-10 with a V-6. Is it normal to add coolant once or twice a year? Can not find any place where it would be leaking. Don't have to add much maybe a half a cup.

Depends on location. If your in a hot area then some evaporation is normal. half a cup isn't that bad. However it is more likely that you do have a SMALL leak and that the antifreeze is just being evaporated away from the area and not leaving much evidence behind.
