I know the principles of the intercooler i.e. cooling the air prior to the turbo and if you want more torque add a bigger one. My question is, could you add another IC in line with the old one and would that work. If not why? (genuine question)
Only slight snag would be that the air might have to go through some pretty obscure plumbing whereas with a new one piece intercooler there is only the normal intercooler hoses.

The undesirable action of the Turbocharger is to increase the temperature of the airflow, in addition to the desirable action of compressing (increasing the pressure of) it. The Intercooler exposes the increased temperature & pressure charge to air @ a lower temperature. Increasing temperature reduces volume of airflow, hence undesireable.
If you really want to delve deep into theory, its not an intercooler, it is actually an aftercooler. It is called an intercooler when two turbos are used in series.
