Ive found a 76 351w rebuilt with 3k miles, aftermarket intake, headers, water pump, etc for $700. Considering it for a stroker project to swap out with my 69 351w. Ive read up on some 351w history but nothing specific to the 2 generations of 351w and their differences. What would I have to worry about swapping a 69 with a 76? Oilpan? Any other things in different places?

Nothing to worry about. The deck height is different (infinitesimally) but everything that matters is the same. I used the same block to build my stroker 400 using D0 heads. It's perfectly fine. Rebuild the better of the two blocks, but if you can use the original, I would.
The heads & pistons make the bulk of the physical difference, cam & cam timing a little more. You will be re-working all this, so the '76 block is a fine donor.
