That is the ideal size for the 289. The 4v carb Ford put on that engine was

480 cfm. Choke selection is more a matter of personal preference than which one is better.

500 is just right although there are some difference in carbs which would make a difference in what cfm you choose based on hp. With the stocker, keep it low. I went with the electric, but could have gone manual. Your choice.

It works just fine on the 260 in my Sunbeam Tiger. I really like the Edelbrock carb. I have a manual choke but I never use it in Southern California. I let the electric fuel pump run for a moment, pump the gas pedal 3 or 4 times and hit the starter. It fires right away and idles well.

Go with the elec choke. also stay with the eldebrock carb. it is soooo easy to adjust. changing the jets/metering orifice as well as the accel pump preload, and the rate of throttle opening. It's almost like turbo charging a small block. Most carbs are too rich at the low end for the small block ford, and then come on too quick as the throttle opens. the edlebrock (which is a revamped version of the old carter AFB) is about perfect for the small block ford. Add a decent set of headers and rue dual exhaust and it is amazing what can be gotten out of the old 289/302 carbureted engines
