Do you have A/C?

Do this test. Let your car idle at home where you can keep an eye on it. Allow the temperature to climb and see what temperature the cooling fan kicks in at. If you have A/C, leave that off while you are doing this. You can turn the A/C on at first just to see if the cooling fan works. If it doesn't come on with the A/C on, you could have fan problems, or possibly you are low on freon. If it does come on with the A/C, turn off the A/C and continue to monitor the temp and when the fan comes on. If the fan comes on at a high temp, pulls the temp down, fan shuts off, temp goes back up, fan comes on again....this is normal. Thermostat opening temp on these cars will be around the 92-95C temp, cooling fan won't come on until around 106-110C. This is normal.
