I would only have mine turned if there was an obvious need for it, deep scratches, discoloration or warping, for example. I usually just hit the rotors with a sanding disc and remove any glazing. I plan on having my front rotors turned as they have a little warping and I want to get rid of that before installing new pads.
It is sort of a Catch-22. If you turn the rotors to eliminate the warpage, you make them thinner, which in turn increases their susceptibility to more warpage.
If the are not warped too bad, I might get them turned once. After that, replace them.

Have you done this in the past, just sand down the rotors? Have you ever had any problems by doing so? Do you go through pads quicker or anything?

If the brake pedal is not pulsating ( moving up and down as you apply the brakes) most noticed when almost at a complete stop, then I do not turn the rotors.
I do take it easy for a 100 miles or so till the new pads adjust to the rotors, don't try any panic stops.
