Is there anyway to tap into the wiring behind the analogue Odometer,Speedo, Oil Temp, Fuel level, and use the signals as an input to a digital display?
Is this the kind of thing that the Haynes Manual could help with?

I would be hard pressed to believe that a Haynes manual would help there; I find them rather useless for anything other than basic tune up and capacity information...
Perhaps the manufacturer of such > 2000 Volvo s40

This would be really tricky on an S40, as the analog instruments are all electronic and if it's anything like the other late model Volvos they all interface to the main computer, so you'd have to hack the protocol and build a microcontroller based box to interface to it. Definitly not Haynes manual material, this would require some serious work, something like installing a state of the art fuel injected engine from one car into another car of completely different manufacture.
