Fluid Consumption 03 V6

I own a 2003 Passat GLX 4 Motion. At the 5,000 mile service, my independent mechanic slightly overfilled the oil (betwen the FULL mark and the orange plastic).

I check the oil pretty much twice a month or so, and noticed very little change. However, as the weather has gotten colder (no idea if this is relevant at all), the oil level has dropped slightly each time I check it, and now it's at the FULL mark. I'm not going to obsess too much about this, because I know the V6 tends to consume oil, and that's why I check the oil so frequently.

But...does anyone know how much oil this represents, if the oil level fell from about 1/2 way between FULL and the orange plastic down to FULL?

Another dropping fluid level is the power steering. When the car was new in January, it was at the MAX mark. It is now about 1/2 way down between MIN and MAX. I see no obvious leaks anywhere, and the concrete garage floor under the car is clean. The car feels fine, no groan from the steering. Should I worry, or just top it off?

What is the power steering fluid part number at VW dealers?

I should mention that when I say I can't see obvious power steering leaks, I'm not going only on the observation that there are no leaks on the floor under the car. I know these cars have pans under the engine. I ran my hands under the power steering pump checking for leaks, and used a flashlight to check around the area. I can't see the steering rack, however.

In 1987, I had a 1987 Audi 4000S that developed a power steering leak, but there was fluid everywhere on the rack. This time, there is either no fluid or I don't know where to look.
