I have 1985 G20 chevy van with a 305. Should the oil pressure switch be closed or open with the engine running.

Well, if the pressure switch is used for the low oil pressure indicating light on the dash it will be closed when the engine is not running and vice versa unless the oil pressure is too low or the switch is defective.
