under engine cover?

On my 96 Cherokee, there a stock rubber mat which covers the bottom of the engine (somewhat) from water. What is it called and where can I get a replacement? Pieces have been torn off over the years.

It is usually called a skirt. The wrecker is likely the only source.

Flooring section at your local The Home Depot or Lowes. Not kidding.

I prefer my Jeeps (among other things) with the skirt off.

It does keep mud and snow out.
