I asked a mate and he says most likely diet but:
"White dog turds, I think they are due to diet mostly in my dogs, anyway. The breed thing you refer to was probably the fact that Dalmations excrete most of their excess protein as uric acid (insoluble white crystals), rather than Urea, (which is soluble)"
Which might explain the turd turning white with time (and precipitation)

...and that fits with my understanding of leather tanning, where white dog s*it was prized. Eeooowwww. ;-)
