Can I balance my wheels by adding the balance weight to the back face rather than using the front face? This is to protect the appearance of the front dish from scratching.

Yes, most tyre specialists should have the machinery capable of doing this. My wheels only have weights on the inside because they don't have an outer lip that weights can be attached to.
