If you're just afraid of the bleed nipples breaking off then leave them alone. You can bleed for bubbles by backing off the terminations on the flexibles which are a bit stouter and seem to resist corrosion better. They are usually high enough above the calipers.
Siezed bleed nipples. Spray with a LITTLE WD-40 the day before, then an hour before you start. Take a medium-sized spanner and smack the backplate sharply a few times about half an inch from the nipple. Use a good socket that fits snugly and lean on it gently. If it won't come out then I'd go to a proper garage.
Application of heat with a little butane torch to the nipple would do it but might be risky.
