The needle normally stays at around a quarter, in all honesty i`ve had it

Get a thermometer in the header tank afte the gauge has stabilised and look for ~90degrees C.
If thats fine- next port of call would be the o2 sensor having failed.

Many thanks for your reply. I take it by Header Tank you mean the Water tank for the radiator?
Also how could i test the O2 Sensor, or is this not possible?

Yes. - be careful when you remove the cap from a hot engine.
Decent garage with an o2 sensor tester. Bear in mind that if the engine is not hot enough the ECU will not go into what is known as 'closed loop running', and without this- there will be no oscillating signal from the o2 sensor.
