what problems could you have if you over filled the oil and how much driving is required for the problem to occur?

Over filling the oil in virtually any engine will result in a higher oil level in the crankcase oilpan. The crankshaft will be churning in the higher oil level, causing aeration and frothing of the oil inside the pan which can lead to lubrication problems. Although it's not as severe, think of that foamy topping on an espresso drink . . . that's not what you want your primary engine lubricant to be like.

I've never really had a problem with this - though I've never done is drastically.
Certainly not as bad as underfilling...
