I know the temperature resistance curve for the sensor

Well, you figure midway on the gauge is the normal operating temperature, right? And you figure the thermostat opens a little below normal operating temperature, right? And you know the temperature the thermostat opens at.

From a 1993 Olds Achieva manual for the temperature gage engine coolant temp sender (not ECM):

54 ohms at 125C/260F 1254 ohms at 40C/100F
