Today I was doing a casual drive on the highway, just like any normal day and "dang"! A little pebble scrached my windshield, just slightly. Nonetheless, it is very anonying to see it. Is there anyway to remove or cover it other than a new windshield?

I had a windshield scratch on my '01 Camry.....not a chip or a star, just an annoying scratch from a rock. A reliable glass place I use said nothing can be done. You can't polish it out, it will distort the optics of the glass, and crack repair adhesives won't work as scratches are too shallow for them to adhere. Matthew
Some glass places will polish it out. You might consider it, cuz after some extreme temperature cycling, a crack can develop sometimes.
