Other than it has a built in gearbox and won't connect up to the VW transaxle without major surgery, sure why not?
I think a 2.2L 16 valve Subaru engine would be a far more practical way to go to make a Bug insanely fast.

That would be a SEQUENTIAL built-in gearbox (paddle paddle), and it wouldn't be rocket science to replace the VW transaxle.
Besides, practical has little to do with ~40 year old baja bugs.
Perhaps but cheap has something to do with it. A Honda Goldwing 6 banger will set you back 4x the cost of a Subaru 2.2L conversion and still not match the power. If you really want killer power, go with a 3.0L 24 valve Subaru engine and a bus transaxle.
Tony
How cheap can you get those Subaru 2.2 motors? And what do they weigh?
More interested in light and reliable as opposed to mega-power, BTW.
They run in the $500 range from wrecking yards in the Portland area and put out 135 HP. I don't know how much one weighs but I doubt it's much more than a type 4 engine.
