Nothing. Don't squeeze the hose shut, you will only damage it. Let the brake *fluid* out and bleed the system carefully when you are done. You will need to bleed it anyway so you save nothing even if you plug the hose. It just isn't necessary.
The correct brake fluid is DOT3 or DOT 4 You should NOT use DOT5 fluid, that isn't compatible with the beetle brake system, and you can't mix DOT 5 with 3 or 4.

The brake fluids i use have it written on the bottle it is mixable. I think it will be that way with all brands.
