If it stops when you hit the brake, I'd suspect one or more missing anti-rattle clips is missing from the brake pads (when you're braking, the caliper is pressing on the pads and that's why they stop rattling but when not braking they rattle around). Cheap fix...replace the missing clips. Did you put them back on after working on the brakes? If so were they on correctly (may have fallen off)?
I second that. My clips weren't missing but had relaxed a bit over the years. After I bent them back into shape the noise stopped.

Also the sleeves around the mounting pins for the caliper mounting can cause lots of rattles also and yes any pedal movement will stop rattles from the brakes.
