1987 Ford Escort choke problems?

I have this '87 Ford Escort Wagon. Nearly every day to work and every day coming home it will momentarily stall out after I have traveled around five miles. (The symptoms- as it is stalling for about 2-3 secs., I will be pressing on the gas pedal but it will just act as if someone turned off the key,slows down and then after about 2-3 secs. it will 'take' and be on it's merry way). Then the rest of the trip to work and home will be fine. I have had it in to the Ford dealer twice but they could not find anything; and as a matter of fact they said it runs like a top. (I am not sure how well they tested it). In any case does this appear to be an automatic choke problem? (I am not the brightest star when it comes to mechanics so go easy). It recently had a fuel filter replaced but this problem has been going on for about a year.
