What would the ideal fuel pressure be for my 300 hp 350 small block engine. The carb will be an Edelbrock 650 cfm.

Ideally around 5.5 to 6 PSI max. If you need more flow, increase fuel line size, not presure.

People often overlook fuel line size and/or pump capacity when they have fuel flow issues. Sounds like you car needs a bigger fuel line for starters.
