I was fortunate enough to be on a prior trip. Mike's duck-on-a-spit is fantastic !
And now he has taken up trail baking ! (I had his cinnamon rolls on the earlier trip)
I've got to try it this summer...but I should probably start out easy with game hens or a chicken.
Cinnamon rolls...umm...the scents wafting through the woods must be awesome!

Heh heh heh...looks like a designated dishwasher was needed, or was having the racoon clean-up the idea? A RAMJ+W offroad cookbook sounds like a great idea!

Slow roasted for close to 7 hours with the marinade it was soaked in overnight cooked down for sauce. The marinade was red wine vinegar, lemon juice, olive oil, brown sugar, garlic, onion, soy sauce, and oregano.

I could toss in an extra easy recipe or two. My family always loved Cowboy Potatoes and Bulls Eye pancakes.

I don't mind collecting recipes posted here, if that's allright with everyone. Some photos would be neat too. Then, when we get enough, we can decide where to go from there.
Someone good with a paint program could maybe do a Jeep climbing a big ol' fried egg or something for the cover!

It is really tasty. I never liked duck much because it was too fatty. The slow cooking keeps a steady drip of fat running off it and leave super tender meat behind with all the fat in the drip tray.

I've been using one of Julia's duck recipes for years at home...comes out nice and crispy with no fat. I love the idea for camp cooking tho.
