Whilst I'm generalising, it's often a head gasket. As long as the cooling system is working (fan works!!) and there are no blockages, then it's down to whether there's either exhaust gas in the header tank, or creamy sludge in the oil filler cap. Does the expansion tank over pressurise? Can you smell petrol or exhaust fumes in there? Do you also know that the radiator isn't just blocked? Check for overall heat in the radiator after the stat has opened - no hot or cold spots. If you've recently done any work on the cooling system it may also have an air lock?

Thanks Danny Its had a new head gasket and as far as I can tell there are no blockages, its been suggested that I could have a porous head, this was the RAC man who rescued me from the A1 late one night the first time it boiled over

I would take the car to a trusted garage and ask them to check the coolant for combustion gases - they stick something in the expansion tank and check the chemical content of the water. I would also be sure that the fan is working - are we talking viscous or electric on your vehicle - I imagine the V8 is still viscous? If so, does it turn relatively easily by hand? (Should be some friction).

Try replacing the expansion tank cap lid. Sounds like it's leaking to me, As the pressure in the system reduces the reduces the boiling point it sound as though because your systems now presurising properly it's boiling over. Had the same problem onmy Espace. sorted by spending about £3 on a new cap.
