Universal grease, of course.
Any good general purpose lithium grease is fine.
AFAIK you may NOT use grease with graphite or MoS2 or any other solid matter included for those purposes.

Yeah, and lithium grease doesn't mix with the polyurea grease already in there. U joints aren't that critical and as long as you lube them consistently and correctly, using enough to force out most of what was in there to begin with and wiping away the excess, you'll get long life out of them. It's more than most folks bother doing, and "any grease is better than none."
