They don't.
They do.
Your engine works very hard to keep the correct mixture-ratio of air-to-fuel at all times. The last thing you should be doing is trying to change it !

If you are determinded to shaft your lump, at least do it at cost price.
More cash left for the rebuild.
If introducing a pennies worth of resistance to one of the sensors on your EFI was a worthwhile thing to do, seems strange the makers omitted it?
That's right, new Bore Wash will get the most stubborn of usenet bores bright white and sparkling like new. Never again suffer with a dull or tedious contributor, just add Bore Wash and, *ding* they'll be so exciting Tara-Palmer Tomkinson will be inviting them round for dinner within the week.
Don't forget, that's Bore Wash: Nothing makes bores more interesting!

They can tell the motor the air is cooler than it is - which will throw in more fuel (not much good) but will also advance the ignition timing 0 which *can* boost power, especially on turbo motors. Whether it advances is too much though is another matter.
Don't buy from ebay if you must try it - just wire a 5k resistor in series with the air inlet temp sensor.

If you want it a bit richer across the range then turn up the fuel pressure, then with the idle mixture adjustment screw, (normally on the bulkhead) reset the idle mixture back to the smoothest tickover.
Adding a resistor can do all sorts of odd things... It will richen it up on cruise, but maybe do nothing at WOT conditions because this is normally a fixed "map" and ignores the sensors anyway. Also this WOT mixture will be about 4.5 percent C0 so already rich for temp control reasons in the cylinder.
If you must add a resistor get one of those 20k "22 turn" adjustable ones so you can go to extremes and see what its really doing?
like you say they are just resistors - a couple a pence from maplins. They make the car think its running cold so over fuel (well run rich)
Not too good on the old economy or your cat but wont kill your engine
