This subject has probably been covered, hopefully not beaten to death, but I need advice on a car cover for a 2003 9-5 or reasons to not use one.

Unless you clean the car very carefully before putting the cover on, it will scratch the car as it goes on and off. Once the cover has grit in it, it will not even matter if the car is clean.
Professional detailers always recommend against covers.
For an everyday machine, it's a little bit silly: you'd need to give it a valet after every trip.
Go for hiring a garage instead.
