Usually one or two. If you're on a tight budget, then just find the ones with any play in them and replace them.

Having said that, if the car is going to take a real beating over the next 2000 miles, it would be wise to replace them all. A worn balljoint rapidly deteriorates on rough roads, and can break. That would be a bummer.
