Go the 30Kservice coming up soon and have done the majority of the 30K service on my '01 Outback myself. Any ideas on what this procedure, the brake fluid replacement, runs?

I have no idea of actual costs, but I'd suggest checking the independents vs. the dealers. This is a commodity type of service that doesn't require specific brand expertise.

If you've done ANY of the service yourself, there's no reason not to do this as well. It used to be a pain, but the little one-way check valves at speedbleeder.com (replacing your regular bleeder valves) make it a snap. Also buy the douchebag-type device to eliminate the mess (a bladder that attahces to the bleeder valve with a piece of hose).
Some poeple say to do this yearly if you live in very humid climates (like the American South).

A turkey baster with a straw works well on getting most of the fluid out of the reservoir for a self done complete flush. Also if you can find blue color fluid helps to determine if you have all the fluid exchanged.
Agreed. If you really need a description, it will look like bourbon whiskey when you start and vodka when you're done (:
