I don't see why it wouldn't work out ok. Obviously you'd have to make sure they were the right offset, and swap the spiggot rings to correct the centre-bore. There are plenty of wheels available off the shelf with two sets of holes (ie, 8 or 10) in them. Use your head though - if one of the new holes would need to be 1mm from the edge of a spoke or whatever, then clearly it WOULD be a silly idea.
It would be easier to modify the hubs so the studs sit further apart. But it is all a bit dodgy and the MoT man ought to notice the wheels are wrong. Still, who knows.
Cut studs off and just use araldite... It will be fine! (if you drive carefully)
I found these and they are flapping gorgous!!!! 7x15 4x100, only problem is they are ET25 :( hopefully they won't impair handleing at all from what a few people on club gti have said.

Oh yeah, I was forgetting that solution.
Or weld them onto the hubs, should get the buyer home :)
