The following query pertains to an 84' Jetta 8v 1.7l
What should the oil pressure senors(specifically the one attatched to the head)' resistance be with no oil pressure, and where does it go from there? Does anyone have a graph of the oil pressure and resistance?

Oil pressure switches are like a switch open or closed. Open = infinite & closed = less than 1.5ohms. Is that what you wanted to know! Now if it has an oil pressure gauge then there is variable resistance but I don't know what it should be.
