were trim rings ever offered with the 15x7 cop car wheels? Or do regular generic parts store ones fit OK?

Sort of...
The wheels used on the 78 Aspen and Volare Super Coupe were cop car wheels, IIRC 8' instead of 7' wide, trim rings were an option.
Can't tell you what will fit though.
Don't believe so.
They should do!
