Anyone care to give me a brief synopsis as to use, fitting & how they work etc?

Do you not have holes in your chassis already for them? There are often lashing points in them or a rear tow-bar's triangulation points are in them. When I fitted jates it was just a case of stuffing a bolt through the holes already there.

remove lashing eyes, add jate rings bolted to the same hole. attach to recovery line using a bridle and heeaave!
