Anyone tell me if its an easy job to fit a diesel di engine in a petrol ford transit, or is it a bitch job.

I haven't done it on a transit, I've done it on other vehicles though. Best bet is not just to get a engine or engine/box, get a whole vehicle, then you can change the exhaust, fuel filters, fuel pipes, radiator, and all the other bits that are going to be different. And don't forget the wiring is going to be different in several respects, i.e. the fuel shutoff switch at the pump.
I wouldn't want to put you off, but it's an awful lot of work, you're always finding something else that needs changing, like the throttle cable will have a different end on it, and if you haven't got a complete vehicle to take parts off, it's going to get expensive.

It cannot be too bad because a local mechanic has done this to around ten or more Transits. He buys cheap used petrol chassis-cabs and converts them to hire out to the local council.

There is company with a workshop next door to mine, that break Transits, and have done DI to petrol conversion many times.
Its very simple and can be done in less than a day...........but as with any Transit, make sure the vehicle you want to fit the DI to is not suffering from bad structural rot.
